Vegan Cheesecake with Miracle Reds

Finding holiday fare that is both “safe” and company friendly can be a challenge. You want to maintain the alkaline lifestyle, but you also want to have a treat. Not to worry. I have always said if you are going to cheat at least cheat healthy.

Here are two recipes that should take the edge off. This is a time to enjoy friends and family not be stressed out over what to eat or what not to eat. Here are a few tips I have picked up along the way:  Always eat before going to a party. If you are not starving, you will be better able to make better choices. I like to have some bentonite clay in a glass of water before going out. The clay will absorb anything thay may upset your stomach and make it easier to leave your body the next day. If you don’t tell them, no one has to know you are not drinking alcohol. Ask for club soda in a cocktail glass with a wedge of lime. Never insult your hostess by refusing her food. Better to leave some on your plate than to say no. Do your best and enjoy the company of friends and family. In the words of Scarlet “tomorrow is another day”.

Christmas Day Salad

SALAD
•    1 bunch OG fresh Kale
•    1 large OG ripe Pear
•    1/2 Pomegranate seeded
•    1 cup OG Walnut halves, toasted

Wash pat dry and remove spine of fresh kale. Chop or tear leaves into bite size pieces. Quarter pear and remove seeds and stem. Thinly slice each quarter and add to kale. Cut or tear pomegranate in half. Remove seeds and add to salad. Toast walnut halves dry in oven at 350° for ten minutes. Or you may toast them in a heavy skillet with some pasture raised butter (Kerrygold) until slightly brown. Add salt and add to salad.

Just before serving add dressing below. Toss and serve. If you want the kale more wilted (also good), add dressing at least one hour before serving. This is absolutely beautiful on your holiday table or any afternoon for a hearty lunch. This will serve 6 as a side salad.

DRESSING
•    2 Limes juiced
•    same volume Grape Seed Oil
•    same volume grade B Maple Syrup
•    1/2 teaspoon Sea Salt
•    1/4 teaspoon freshly ground Black Pepper
•    1/4 teaspoon freshly ground Nutmeg

Place all dressing ingredients in a jar with a tight fitting lid. Shake to combine. Allow to rest for at least one hour to combine flavors. Keep refrigerated.

Classic Vegan Cheesecake

I can’t even begin to describe how totally yummy this creamy treat tastes!

CRUST
•    1 cup raw Pecans or Walnuts
•    1/2 cup pitted Medjool Dates
•    1/2 cup dried unsweetened Coconut flakes
•    1/2 teaspoon Sea Salt
•    Coconut flakes to dust bottom of pan

Prepare crust first. I use an 8” spring form pan, but a pie plate will also work. Place all ingredients (except coconut for bottom of pan), in a processor and pulse until well combined. It should resemble sticky crumbs. Dust bottom of pan with coconut and press crust mixture evenly on bottom of pan. Place in freezer for at least one hour.

FILLING
•    2 cups raw Cashews soaked at least 4 hours
•    1/3 cup Coconut Oil, warmed till liquid (not hot)
•    1/4 cup Lime or Lemon juice
•    1/4 cup grade B Maple Syrup
•    1 teaspoon gluten-free Vanilla extract
•    1/3 cup water
•    Fresh berries and mint leaves as garnish

Drain liquid from cashews and discard. Place all ingredients (except garnish) in the bowl of a food processor and process. Stop and scrape sides from time to time. Process untill smooth and creamy. If you like you may add a cup of strawberries or mango to the filling while processing, use your imagination. Pour into frozen crust. Freeze at least a couple of hours. Remove from freezer about an hour before serving. Decorate with berries and serve.

VARIATION
Make as directed - EXCEPT:  place approximately two-thirds of the filling in the crust. Add one scoop Miracle Reds and one cup of raspberries or strawberries or mango or 1/4 cup cocoa powder or... into the remainder of filling in the processor and process until smooth. Pour over the plain filling and freeze. If you are using a spring form pan or a clear glass pie plate the three distinctive layers make a beautiful presentation.
